Cheesy Cajun Chicken Dirty Rice
4 portions, 550 Calories each
You will need:
2 chicken breasts, diced
250g rice
130g cheese, grated
1 tablespoon Cajun seasoning (adjust to suit taste)
1 onion, sliced
1 pepper, sliced
1 tin chopped tomatoes
Juice of 1 lime
Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large frying pan add sliced onions and peppers and auté until they
become tender.
3. Add the diced chicken breasts and cook until fully cooked.
4. Add the Cajun seasoning. Cook for a few minutes to allow the flavours to
meld.
5. Pour in the tin of chopped tomatoes and cook until the mixture is heated
through.
6. Add the cooked rice to the pan, stirring well to combine with the chicken
and vegetable mixture.
7. Squeeze the juice of one lime over the rice and mix thoroughly.
8. Sprinkle the grated cheese over the top of the rice mixture. Cover the
pan with a lid and let it sit for a few minutes until the cheese is melted.
9. Serve the cheesy Cajun dirty rice hot with salad on the side.

Cumberland Sausage Pie
Ingredients:
8 Cumberland sausages
1/2 onion, finely chopped
1 pepper, diced
Potatoes, mashed (enough to cover the pie)
Gravy granules
130g Cheese, grated (for topping)
Instructions:
1. Preheat the oven to 200°C (180°C for fan ovens).
2. Slice the sausages into bite-sized pieces and add to a pan with low-calorie cooking spray, cook for 5 minutes until browned.
3. In a pan, sauté the finely chopped onion and diced pepper until they are softened.
4. Add the sausages to the pan with the onions and peppers.
5. Prepare a thick gravy using gravy granules according to package instructions. Pour the gravy over the sausage, onion, and pepper mixture, stirring well to coat.
6. Transfer the sausage and gravy mixture to a pie dish, spreading it evenly.
7. Spread mashed potatoes over the top of the sausage and gravy mixture, creating a smooth layer.
8. Sprinkle grated cheese over the mashed potatoes to form a cheesy crust.
9. Place the pie in the preheated oven and bake for about 20-25 minutes or until the cheese is melted and golden.
10. Once done, remove the sausage pie from the oven and let it cool for a few minutes before serving.

Creamy Garlic & Tomato Pasta & Garlic Bread
Ingredients:
250g pasta
130g cheese, grated
1 can (400g) chopped tomatoes
3 cloves garlic, minced
150g low-fat cream cheese
1/2 onion, finely chopped
1 pepper, diced
Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions. Drain and set
aside some of the pasta water.
2. In a large pan, sauté the chopped onion and diced pepper until they
become tender.
3. Add minced garlic to the pan and cook for an additional minute until
fragrant.
4. Pour in the can of chopped tomatoes, including the juice. Season with
salt and pepper to taste. Simmer for about 10 minutes, allowing the
flavours to meld.
5. Stir in the low-fat cream cheese until it is fully melted and
incorporated into the tomato mixture.
6. Add the cooked pasta to the pan with a few tablespoons of pasta water,
along with tossing well to coat the pasta with the creamy tomato sauce.
7. Sprinkle the grated cheese over the pasta and sauce, covering the pan
with a lid. Let it sit for a few minutes until the cheese is melted.
Serve with the garlic bread stick and some salad

Slow Cooker Coconut & Lime Chicken & Rice
Ingredients:
4 boneless, skinless chicken breasts
Zest and juice of 2 limes
400ml coconut milk
1 cup rice
1 onion, finely chopped
Optional: sprinkle of chilli powder
Salt and pepper to taste
Instructions:
1. Place the chicken breasts in the slow cooker.
2. In a bowl, mix the lime zest, lime juice, and coconut milk. Pour the
mixture over the chicken in the slow cooker.
3. Add the finely chopped onion to the slow cooker, spreading it evenly
over the chicken.
4. If desired, sprinkle a bit of chilli powder over the ingredients for
some heat. Adjust according to your preference.
5. Season with salt and pepper to taste.
6. Set the slow cooker to low heat and cook for 4-6 hours or until the
chicken is tender and cooked through. Once the chicken is cooked, pull it
apart with 2 forks then add it back into the mixture.
7. About 30 minutes before serving, cook the rice according to package
instructions, then mix it into the chicken mixture.

Cheeseburger & Chips
Ingredients:
250g 5% minced beef
130gCheese cut into slices
4 brioche buns
Potatoes (enough for making fries)
Salt and pepper to taste
Instructions:
1. Preheat the oven to 200°C (180°C for fan ovens).
2. Peel and cut the potatoes into thin strips to make fries. Toss the
fries with a bit of oil, salt, and pepper, then spread them on a baking
sheet. Bake in the preheated oven until golden and crispy. Alternatively,
add them to an Air Fryer at 200 degrees for 20 minutes.
3. Divide the minced beef into four equal portions and shape them into
burger patties. Season each patty with salt and pepper.
4. Cook the burger patties on a grill or in a pan over medium-high heat
until they reach your preferred level of doneness.
5. In the last minute of cooking, place a slice of cheese on each burger
patty and cover to melt the cheese.
6. Slice the brioche buns in half and toast them lightly.
7. Assemble the cheeseburgers by placing a burger patty with melted cheese
on the bottom half of each brioche bun.
9. Serve the cheeseburgers alongside the crispy fries
