Feeding Four for a Fiver £5: Exploring Affordable Family Dinners in the UK's Top Supermarkets | M&S Food
If you are looking for £5 meals to feed the family, or cheap and healthy
dinners for under £5, or ways to feed your family for £5, then this is the
post for you!
I've embarked on a mission that I'm really excited about. I've challenged
myself to create family meals that are not only delicious but also
budget-friendly, costing no more than £5 for all the main ingredient.
With the cost of living crisis at the moment, we are having to be more thrifty
than ever, so creating recipes for cheap and healthy dinners that are not only
cheap, but also delicious is a challenge we can all benefit from.
And to make it even more interesting, I'm exploring all the leading UK
supermarkets, starting with M&S, and this Slow Cooker Cheesy Chipotle Rice
Recipe.
The best part of this adventure is that there are no set rules on cuisine or
dietary restrictions. I'm all about variety and trying out different recipes,
so we're in for a culinary journey.
Hopefully, we can all discover some fantastic, cost-effective family meal
ideas together.
Stay tuned for updates on my thrifty food adventures, and let's see how
creative we can get with that £5 budget!
Now I am including a couple of items that you should already have in your
cupboards at home, such as stock, salt, pepper etc.
Slow Cooker Cheesy Chipotle Rice Recipe
Total cost: £4.70
304 Calories per portion
This recipe is even easier as you just chuck it all in the slow cooker.
The portions are on the slightly smaller side as it was quite difficult to
get cheaper ingredients from this shop.
Here are the ingredients I bought from M&S
1 microwave pack long grain rice
1 tin chopped tomatoes
1 tin kidney beans
2 teaspoons chipotle chilli pasta
30g cheddar cheese
Items needed from store cupboard:
Stock cube
(Optional) smoked paprika
Salt and pepper
Instructions:
Add the rice, chopped tomatoes, kidney beans and 2 teaspoons of Chipotle paste
to the slow cooker (adjust according to spice preferences)
Mix up a stock cube with 300ml of water and add.
Season with salt, pepper and smoked paprika if using.
Cook on high for 3 hours, or low for 6.
Finely grate the cheese and sprinkle on top for the last 30 mins of cooking.
