Creamy Chilli Cheese Stuffed Flatbreads Recipe | Healthy Lunch

Delicious little flatbreads stuffed with a creamy cheese filling, perfect blend of spice and creaminess.

Ingredients

For the filling
  • 115 grams low-fat cream cheese
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 50 grams low-fat cheddar cheese, shredded
  • Salt and pepper to taste
For the Flatbread Dough:
  • 250 grams plain flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 125g fat free Greek yogurt

Instructions

Prepare the Filling:
  1. In a mixing bowl, combine the low-fat cream cheese, chili flakes, minced garlic, chopped parsley, and shredded low-fat cheddar cheese.
  2. Season the mixture with salt and pepper to taste. Mix until all the ingredients are well combined. Set aside.
Make the Flatbread Dough:
  1. In a large mixing bowl, combine the plain flour, baking powder, and salt.
  2. Add the fat free yogurt and mix well.
  3. Knead the dough until it's smooth and elastic. You may need to adjust the amount of flour or yoghurt to achieve the right consistency
  4. Divide the dough into 4 equal portions and roll each portion into a ball. Let them rest for about 10 minutes.
  5. Assemble the Stuffed Flatbreads:
  6. Preheat a non-stick skillet or griddle over medium-high heat.
  7. Take one ball of dough and roll it out into a thin circle (about 20 centimeters in diameter) on a floured surface.
  8. Place a portion of the prepared cream cheese filling in the center of the rolled-out dough.
  9. Fold the dough in half to cover the filling and press the edges to seal it. You can crimp the edges with a fork for a decorative touch.
Cook the Flatbreads:
  1. Carefully transfer the stuffed flatbread to the preheated skillet or griddle.
  2. Cook for 2-3 minutes on each side, or until they are golden brown and slightly puffed.
  3. Repeat the process with the remaining dough and filling.
  4. Optional:
  5. Melt some low fat spread with some parsley and brush over the top of the flatbreads once cooked.

Notes

Cook on a dry pan, keep an eye to make sure they don't burn
