A delicious and easy beef hot pot recipe that's lower in calories. Can be made using any veg in the fridge that is about to go off! Cheap, cheerful and delicious!

This dish is so comforting and is great for batch cooking ahead of time at the weekends.

I made this dish using £1.50 Lidl veg box, including tomatoes, onion, potatoes, and cabbage.
I actually put the potato topping in my air fryer meaning it was even quicker to cook, and the potatoes were extra crispy.
I made this and ate it for the next few days as either my lunch or dinner, it was amazing.
If you don't want to use your air fryer for the potatoes, you can parboil them and cook the dish in the oven as normal.
It would also be delicious as a cottage pie with a mashed potato topping.
It is so simple to make yet extremely delicious!
