A delicious, easy to prepare, healthy, lower calorie one pot Orzo recipe, inspired by pepperoni Pizza!
I had the idea to make this recipe a few weeks ago, but apparently pepperoni is in short supply!
I went to all my local shops, and there was plenty of Chorizo, but no pepperoni to be found!
I took a trip into town and 6 shops later, I finally found some!
As soon as I got home I made this straight away, and it was an absolute triumph!
So simple to make, so delicious, and it serves 4 so there were plenty of left overs!

I used lower calorie grated mozerella, so I got a great cheese pull too!
This recipe is also pretty cheap to make, with just a few ingredients.
It's best to use an iron skillet pan, or frying pan that can withstand being put under the grill to melt the cheese afterwards!

What is orzo?
You could be mistaken for thinking that Orzo is a type of rice. Orzo is Italian for "barley" because it looks like the grain in its unprocessed form. Orzo is actually small rice-shaped pasta, and is very versatile.
If you don't have orzo, any pasta of your choice will do!
