3. Put a tablespoon of oil in the pan where the mussels will be cooked separately. Put the rest of the oil in a high-sided frying pan, where all the ingredients will be placed, and fry the onion, garlic, and 3/4 of the parsley over low heat.
4. Add the pasta to the boiling water and cook until al dente, then drain.
5. Meanwhile, heat the oil in the prepared pan, add the mussels to it, stir well and pour in some wine. Cover the pan with the lid and let the mussels cook for about 5 minutes until they crack.
6. Remove the mussels from the pan with a ladle and transfer them to another pan. Sort out any mussels that are still closed. (Do not open them by force, and do not eat them! Raw mussels can be poisonous!). Pour the broth from the pot through a very fine sieve into the pan to keep any sand left in the mussels from getting into the food.
7. Add remaining parsley and season with salt, pepper, chili, and lemon juice.
8. Add pasta to the pan and mix everything well.
9. Arrange on warmed plates and serve WITHOUT cheese.

Directions:

2. Leave the wine, sherry, lemon juice, and lemon zest to infuse for several hours. Then add sugar, grate the nutmeg, add the cream, and mix until a fluffy consistency.

Tip: The syllabub doesn’t get quite as stiff as whipped cream, but almost. And it keeps well in the fridge for a day without changing its consistency.
