I love a good fajita, and I am trying to eat less meat each week. I have a whole section of vegetarian recipes which I would like to continue to build on.
This recipe is super simple, as I literally throw all the vegetables in a dish, make up a seasoning mix, and let the oven do all the hard work!

The most effort you will make is to chop up the veggies!
Of course, if you would like to add some meat into this dish, swap one of the vegetables for your protein and adjust cooking times to suit.
