This is a delicious and simple Chicken Tikka Rice Stir-fry dish that is Slimming World friendly and lower calorie.
Sometimes, the most delicious meals come about from throwing together what you
have in the cupboard. That is very much how this dish was created.
I love Chicken Tikka flavours, but didn't fancy making a full blown curry.
This can be prepared in 1 pan, meaning less washing up after you have made it!
I used red and yellow peppers for this, but you can add as much or as little
veggies as you like.
There is something super comforting about a tasty rice dish!
