Sausage Creamy Cajun Pasta Recipe

Sausage Creamy Cajun Pasta | Slimming Friendly
Ingredients
- 4 low-fat sausages, chopped into chunks
- 180g pack light cream cheese
- 1 red pepper, finely diced
- 1 yellow pepper, finely diced
- 1 red onion, finely diced
- 1 red chilli, finely diced (leave out if you don't want spice!)
- 4 tbsp tomato puree or passata
- 1 clove garlic
- 4 tbsp Cajun Spice mix (plus 1 for the sauce)
- 50ml Chicken stock
- 300g dried pasta
- Low-calorie cooking spray
Instructions
- Heat a frying pan over a medium heat and spray with low-calorie cooking spray. Add the sausages and fry off with half of the Cajun seasoning. Once cooked, set aside.
- Add the red & yellow peppers, onion, garlic and chill to the frying pan. Fry of for 2-3 minutes.
- Meanwhile, cook the pasta as per pack instructions.
- Add the tomato puree, stock and cream cheese to the frying pan with the sausage and veg mix. Stir until a sauce is formed. Add the rest of the Cajun seasoning.
- Add some of the pasta water to reduce the thickness of the sauce if required.
- Once the pasta is fully cooked, add it to the sausage and sauce mix and stir through so everything gets an even coating of the sauce.
- Top with extra cheese
