Is there anything more exciting than knowing you have chicken fajitas for
dinner? It's even more exciting when you know that the mixture is sat cooking
away in the slow cooker already for you.
This recipe creates a delicious mix that is really versatile. I served it as a
traditional fajita with all the trimmings.
It can be kept in the fridge as well for a few days afterwards, so any left
overs can be turned into a delicious lunch the next day.

and this one is so simple to prepare.
When serving I used Weight Watchers tortilla wraps. which are classed as a
Healthy Extra B on Slimming World.
You could also try a wholemeal wrap instead to make a slightly healthier
choice, or of course go without any wrap at all and serve it with loads of
salad.

I served my Fajitas with salad, salsa, cheese, sour cream and plenty of lime
to squeeze on top! You have to load that Fajita up as much as you can before
trying to roll it all up an eat it!

Slow Cooker Fajita Mix Recipe

You will need:
2 large chicken breasts
1 red pepper, chopped
1 yellow pepper, chopped
1 red onion, diced
1 tsp smoked paprika
1 tsp cumin
2 fresh red chillies, de-seeded and finely chopped
1tsp chilli powder
Juice of 1 lime
1 clove garlic, crushed
1 Chicken Oxo cube
2tbsp tomato purée
Method-
Add the peppers, onion and chillies into your slow cooker.
Mix together the paprika, cumin, chilli powder, lime juice, garlic,
crumbled Oxo cube, and tomato purée and smear on the chicken breasts.
Add the chicken to the slow cooker and cook for 3 hours on high, 6 hours
on low. If you wish to cook this in the oven instead, add everything into
an oven proof dish
In the last half an hour of cooking take the chicken breasts out of the
slow cooker, apart and pull them apart and shred with 2 forks.
