A delicious Chinese Fakeaway recipe, low calorie Super Simple Stir-fry!
I really enjoy creating my own versions of
Chinese Food and
Fakeaways, but they can sometimes take a lot of effort. This recipe is a super simple
stir fry that you can throw together on a weeknight.
If you wanted to make life even easier, a lot of supermarkets now make big
bags of ready prepared stir-fry veg, so you can save even more time when
making this.
You can also make this vegetarian but leaving out the chicken, and swapping it
with even more vegetables.
The great thing about a stir-fry is that you can pretty much throw in any veg
that you have in the house, so get creative and get as much in as
possible.
You could also experiment with flavours, like adding in some hoisin or other
Chinese flavours.
There are also loads of different dried noodles that you could experiment with
as well.

Super Simple Stir-fry Recipe

You will need:
If you want to make this dish even simpler, you can but read prepped bags
of stir fry vegetables
4 spring onions, cut into 4cm/1½in lengths
1 garlic clove, crushed
1 tsp lazy ginger
1 red chilli, deseeded and chopped
1 carrot, cut into small matchsticks, or grated
1 red pepper, cut into small matchsticks
100g baby sweetcorn, chopped up
1/2 cabbage, cut into strips
2 tbsp tomato purée
2 tbsp low-salt soy sauce
1 tbsp oyster sauce
2 blocks of dried egg noodles
Low calorie cooking spray
Handful of beansprouts
2 large skinless chicken breasts
Method:
Mix together the garlic, ginger, chilli, soy sauce and tomato purée. Add the chicken to this mixture, and set aside.
Boil a large pan of water, add the noodles, carrots, and cabbage, then cook for 3 mins. Drain and then set aside.
Spray a wok with low calorie cooking spray.
Add the chicken and the garlic/ginger/chilli/soy marinade, then stir-fry for 4-5 mins until cooked.
Add the noodles, all of the vegetables, beansprouts and spring onion to the wok, then mix the oyster sauce with 2 tbsp water. Stir through and then serve!
