I absolutely love a good
Pasta Dish! I think it is the perfect comfort food, in fact, I could probably eat pasta
for breakfast, lunch and dinner!

If you are following Slimming World or a similar plan, you can often have some
pasta in your diet without the guilt. I always try and make healthier pasta
dishes so that they can be enjoyed by anyone following a healthy eating
plan.
This dish is really simple to make, and only used up a frying pan and saucepan
for the pasta, so saves on washing up too!
It has a creamy peppercorn sauce flavour, with succulent beef strips, peppers
and onions.
I used strips of frying steak in this dish, but you could easily replace this
with beef mince, or if you are looking to make this vegetarian friendly, swap
for Quarn mince.
My frying pan is also oven proof, so I could pop it under the grill to melt
the cheese on top. If you don't have a pan like this, make sure you just pop
the pasta into an ovenproof dish before you put it in the oven.

This dish goes perfectly with my
delicious cheesy garlic bread! Simple to make and also Slimming World friendly! I always serve
my pasta dishes with a big salad as well.
Any leftovers of this pasta dish can kept in the fridge and eaten the next
day for lunch. I always cook more than I need, so that there are
plenty of leftovers the next day.

Creamy Beef Peppercorn Pasta Recipe
Serves 4

You will need:
500g thin frying steaks cut into strips
Low calorie cooking spray
Pinch Sea Salt
large handful of mushrooms
1 green pepper
1 yellow pepper
1 large onion
1 tbsp Worcester sauce
1 tsp smoked paprika
1tsp Balsamic Vinegar
160g extra light cheddar
250g dried pasta
1 tub extra light cream cheese
1 garlic clove, crushed
1/2 teaspoon crushed peppercorns
100ml beef stock (made up from a cube)
Low calorie cooking spray
Pinch Sea Salt
large handful of mushrooms
1 green pepper
1 yellow pepper
1 large onion
1 tbsp Worcester sauce
1 tsp smoked paprika
1tsp Balsamic Vinegar
160g extra light cheddar
250g dried pasta
1 tub extra light cream cheese
1 garlic clove, crushed
1/2 teaspoon crushed peppercorns
100ml beef stock (made up from a cube)
Method:
Preheat your oven to 180 degrees.
Boil the pasta as per pack instructions.
Spray a frying pan with low calorie cooking, and add in the peppers, onions, mushrooms, and garlic.
Cook for around 3 minutes, or until the veg has softened.
Remove veg from the pan and set aside.
Add in the beef strips, the balsamic vinegar, Worcester sauce, and smoked paprika season with salt and cook until beef is sealed around the edges.
Turn the heat down to the lowest. Mix in the cream cheese until melted, careful not to let it overheat. Sometimes you can do this without the hob heat being on. Add in the crushed peppercorns.
Add the beef stock and mix. Add half of the cheddar cheese, mix until melted.
Add the pasta and mix well.
Top with grated cheddar and pop in the oven to melt. If you don't have an oven proof pan, transfer mixture to a large greased baking dish and then top with the cheese.
Bake for 10 to 25 minutes or until the cheese has completely melted.
