Is there anything better than a slimming friendly tomato soup recipe? Comfort
food without the guilt!
I don't know about anyone else, but sometimes I need to east something that
feels super dirty. This usually means a craving for a takeaway, but sometimes you can create
something that is diet friendly, and still feels like you're having a treat.
Cheese toasties are one of my favourite things on the planet, and I would
eat them at every meal if I could!
If you are following a healthy eating plan such as Slimming World, you get an allowance of dairy and fibre, which means cheese toasties are a possibility with some low-fat cheese and wholemeal bread.

This soup is a recipe of mine that I have used for a long time and tastes too
similar to the Heinz Cream of Tomato Soup.

Cheese Toastie & Cheesy Tomato Soup Recipe

You will need:
For the soup:
2 tins of chopped tomatoes
1 tin of baked beans
4 small pickled onions (or one large one), chopped in half
1/2 pint vegetable stock
a pinch of salt & pepper
1 tsp Worcester sauce
1/2 tsp sweetener
For the toasties:
2 slices 400g wholemeal bread
40g extra light cheddar cheese
Method:
For the soup:
Put all ingredients in a large saucepan and bring to boil.
As soon as the soup boils, reduce the heat to the lowest and allow to
simmer.
Cover and leave for 15 mins to simmer gently.
Once cooled slightly, add to a blender and blitz until the mixture is
completely smooth.
Add some cheese on top and allow to melt.
For the toastie:
Spray 1 side of each slice of bread with the low calorie cooking
spray, then turn them over.
Grate the cheese
Add 40 extra light cheese to one of the slices of bread
Place the other slice of bread on top, cooking spray side up.
Place the toastie in a heating frying pan, spray with more low calorie
cooking spray if needed.
Use a spatula to press the toastie down, but not too hard to press the
filling out. You can also use a tin or something to keep them pressed
down while cooking.
Cook for 2 mins on one side, then use a spatula to flip it over.
