A delicious and easy to make Slimming World friendly slow cooker
recipe.
This is a really tasty recipe, that I made using leftover pulled pork that I
had. It is a great way of making use of leftovers, and is very delicious as
well!
If you don't have
leftover pulled pork or
pulled brisket, then you could always buy one of the pre-made kits that you get in super
markets, and obviously adjust the syns/calories.
You can kind of throw in the ingredients, and this recipe would also come out great in a slow cooker.
I love anything BBQ flavour, and this is so tasty that you won't even know that it is relatively healthy!

I topped mine with smoked cheddar for the extra smokiness! I also got these
super cute mini casserole dishes from Aldi when I did my food shop.
If you don't have leftover pulled pork, bacon would also work really well in
this dish instead.

BBQ Burnt End Bean Bake Recipe

You will need:
For The Beans
1 red onion, diced2 garlic cloves, chopped
1 tbsp white wine vinegar
1 tin pinto beans, drained and rinsed
1 tin kidney beans, drained and rinsed
400ml tub passata
1 tsp Worcestershire sauce
3 tbsp balsamic vinegar
3 tbsp sweetener
Salt and pepper
1 tsp smoked paprika
40g extra light cheese/35g smoked cheddar per portion
leftover pulled pork or leftover pulled brisket OR a pre-made pulled pork OR bacon instead
Method:
Fry off the onion and garlic until softened. Add all the rest of the
bean ingredients, and mix well.
Transfer into an oven proof dish and bake for 35 mins, or until
everything has softened.
Once baked, stir through the left over pulled pork.
Top with the cheese, then put back in the oven until melted.
