Spinach & Feta Filo Parcels | Healthy Recipe



Of all the pastries there are, filo is one that is the most manageable on Slimming World. It's really light, and also super versatile.

In the past I have made dishes like this Beef Filo Pasty Pie and Samosas. This recipe is vegetarian, super delicious, easy to make and low syn. I guess you could describe them as little British Samosas.


They are delicious on their own as a light bite, or are amazing as a side or picnic snack. The filo can go quite crispy if over cooked, so make sure that you keep an eye on them while they're in the oven.

You will need:

1 small onion, finely chopped
1 garlic cloves, crushed
Low Calorie Cooking Spray
I bag of Spinach, stalks trimmed and chopped
75g Feta, Crumbled into small pieces
preserved lemon ½, finely chopped
filo pastry 2 sheets


Method:


Heat the oven to 180C/fan 160C/gas 4.

In a saucepan sprayed with low calorie cooking spray.

Fry the onion and garlic until soft but not browned.

Add the spinach and stir until it wilts and any liquid dries off (it will look like lot's of Spinach, but it shrinks a lot!)

Add the mixture to a bowl, then add the feta cheese and lemon juice.

Spray a sheet of filo and cut it length ways into 3 strips.

Put 2 tbsp of the mix at the top of each strip and fold each diagonally to make a small triangle, then continue to fold over down the length of the pastry.

Repeat with the remaining filling and pastry.

Place the Arrange the parcels on a baking sheet and spray them with more cooking spray. Bake for 18-20 minutes, or until they’re golden brown and cooked through.
