I absolutely LOVE my
Slow Cooking,
and always try out new recipes and ideas in mine. I recently did a
collaboration with Poundshop
and got some new Slow Cooker liners that I wanted to test out.
Slow cooking is a real comfort to me, there's nothing better than walking into
the smell of a cooked dinner when you get in from work.
This recipe requires a little bit of effort before hand making the meatballs,
but is totally worth it. You could of course use pre-made low fat meatballs
instead to save even more time.
Apart from browning off the meatballs, this recipe is pretty much dump and go.
You can chop the onions and peppers as precisely or as roughly as you want.

Slow Cooker Low Fat Meatballs in Tomato Sauce Recipe

You will need:
500g 5% lean beef mince
2 bacon medallions, all fat removed, sliced into strips
1 red pepper, finely chopped
1 onion, finely chopped
1 tsp Italian herbs
2 cloves of garlic, crushed
pinch salt and black pepper
500g of passata
1 Beef oxo cube, crumbled
1 tablespoons of balsamic vinegar
2 tablespoons of Worcestershire sauce
1 tbsp tomato puree
2 bacon medallions, all fat removed, sliced into strips
1 red pepper, finely chopped
1 onion, finely chopped
1 tsp Italian herbs
2 cloves of garlic, crushed
pinch salt and black pepper
500g of passata
1 Beef oxo cube, crumbled
1 tablespoons of balsamic vinegar
2 tablespoons of Worcestershire sauce
1 tbsp tomato puree
Method:
In a large bowl mix the mince, half the minced garlic, salt and
pepper.
Using your hands, mix together well and roll into 12 even meatballs.
Spray a frying pan with low calorie cooking spray and fry off the
meatballs until they are browned on the outside and sealed.
Add the meatballs with the rest of the ingredients to the slow cooker
and leave for 3 hours on high or 6 hours on low.
