I really like peaches and flat peaches, but don't buy them with my shopping that much. The Tesco offers gave me the perfect excuse to buy a pack, and make something a little different. When I thought about the peaches, the first thing I wanted to try out was a yummy peach crumble.
It took a few attempts to perfect the right crumble mixture, but I think I perfected it in time for writing this recipe up!
It's really simple to make, and feeds 4. As well as being delicious, it is also low in sugar and calories, and slimming friendly. It's also friendly on the bank balance, as well as the figure!
See how I got on shopping for bargains in store!

You will need:
Makes 4
4 small Peaches, peeled with stones removed
2 tbsp Porridge Oats
2 tbsp self Raising Flour
2 tsp Reduced Fat Spread
3 tbsp Granulated Sweetener
1/4 tsp Cinnamon
Low Calorie Cooking Spray
Method:
Preheat the oven to 160ºC
Cut the peaches into small chunks, and place into the bottom of 4 little oven proof ramekins or dishes. Sprinkle half of the sweetener over the top of the peaches. Set aside for a moment while you prepare the crumble mix.
In a bowl, add the flour, oats, low fat spread and the other half the sweetener. Rub together with your finger tips (just like when you make a normal crumble!) until the crumble mix starts to form in your fingers. Don't use the palms of your hands as they are warmer and could melt the butter.
Top the peaches with the crumble mixture and spray with low calorie cooking spray.
Bake in the oven for 25 minutes until the tops of each crumble is golden.
