The great thing about roasting vine tomatoes, is that they can be used in many different was afterwards. From a simple side to blending it down into a sauce or soup.
Fruit and vegetables. Love them or hate them, we all know that they are an important part of a healthy diet. The older I've got, the more ways I find to incorporate veg into my diet.
Thanks to Tesco's new seasonal fruit and vegetables Fresh 5 deal, eating healthily can be better value than ever. Every 2 weeks, Tesco’s 5 best priced fruit and veg will be on display at the end of the isles, and on rotation every 2 weeks.

Balsamic Roasted Vine Tomatoes Recipe

You will need:
1 pack of vine tomatoes
2 tbsp balsamic vinegar
1/2 a lemon, cut into slices
1 garlic clove, chopped
salt and freshly ground black pepper

Method:
Preheat the oven to 200C.
Add the tomatoes to a small roasting dish, then add the lemon and garlic into the bottom of the tray.
Drizzle the balsamic over the tomatoes, then spray with low calorie cooking spray.
Roast for 10-12 minutes.
Drizzle with the balsamic residue to serve.
