This is a really simple recipe that is perfect for throwing together on a weekday night! It is a mix of a rich BBQ sauce, mixed beans and low fat sausages.
There are loads of different options now for low fat sausages, so make sure you choose one that is both tasty and low fat.
The dish is also packed full of fibre with all the mixed beans. I served mine with a salad and some tasty crispy potatoes.

Sausage & BBQ Bean Bake Recipe

You will need:
8 low-fat pork sausages
1 large red onion, sliced
1 large pepper, sliced
2 x 400g tins mixed bean salad, drained
1 x400g tin Italian chopped tomatoes
10g fresh flat-leaf parsley, roughly chopped
5 tbsp Worcestershire sauce
1 tsp mustard powder
500g passata
3 tbsp balsamic vinegar
2 cloves of garlic, crushed
3 tbsp sweetener
Salt and freshly ground black pepper
1 tsp smoked paprika
To Top:
80g extra light cheddar cheese
Method:
Preheat oven to 180 degrees.
Add the sausages to an oven proof dish and bake in the oven for 15 mins, or until browned.
In a bowl, mix all of rest of the ingredients together, except the cheese.
Remove the sausages from the oven then add then BBQ bean mixture. Mix in with the sausages.
Top with 80g extra light cheese then bake for 25 minutes in the oven, or until the cheese is bubbling.
