This is a cheats slow cooker Slimming World friendly Ramen Noodle Soup.
What is Ramen? Ramen is a Japanese dish that consists of noodles served in a meat or fish-based broth and topped off with an egg. I had never actually made this myself, but after seeing so many amazing photos on Instagram, I really wanted to give it a go.

This is a kind of 'cheats' version where I put it in the slow cooker and leave it alone. I saved loads of time by getting a stir fry veg mix as it had all the perfect items for for Ramen. The mushroom stir fry bag had mushrooms, cabbage, red onion and bean sprouts.
I also used some dried noodles, but added them in towards the end to stop them going mushy. The ramen is topped off with a soft boiled egg dropped into the broth. I also added some sweetcorn for some extra colour.
I made this with chicken, but you could switch the stock flavour and meat to have different varieties.

Slow Cooker Noodle Soup Recipe

You will need:
2 skinless chicken breasts
700ml chicken stock (made up from cubes)
2 garlic cloves, finely chopped
4 tbsp soy sauce
1 tsp Worcestershire sauce
1/2 tsp pureed ginger
½ tsp Chinese five spice
pinch of dried chilli flakes
125g dried noodles
Pinch of black pepper
1/2 tin sweetcorn
1 soft boiled egg
1 bag stir fry veg
700ml chicken stock (made up from cubes)
2 garlic cloves, finely chopped
4 tbsp soy sauce
1 tsp Worcestershire sauce
1/2 tsp pureed ginger
½ tsp Chinese five spice
pinch of dried chilli flakes
125g dried noodles
Pinch of black pepper
1/2 tin sweetcorn
1 soft boiled egg
1 bag stir fry veg
Method:
Add everything except the noodles into the slow cooker.
Cover and cook on low for 3 hours.
Remove the chicken and set aside. Add the dried noodles to the slow cooker and put he lid back on for a further 10 minutes.
Slice the chicken breasts into strips and after the 10 minutes add to the ramen.
Stir through the chicken and place in bowls to serve.
Top with a soft boiled egg, sliced in half.
