Low Calorie Quiche Recipe with Lo Dough

Quiche is something that I have always enjoyed, and like to make some up for take to work lunches. I usually have crustless quiches when I am on a diet, to save the calories from the pastry.

There has been lots of talk lately within my Facebook Groups about Lo Dough. Lo Dough - 'It's not a wrap and it's not a slice of bread.' It's bread reinvented It's bread reinvented, a new way to enjoy the convenience and taste of bread & pastry with 90% less carbs and loads more fibre, and only 39 calories per slice!

Of course, there are loads of ways that Lo Dough can be incorporated into meals, but the most popular meals I see posted on Insta using them are pizzas and wraps.

I wanted to try out something a little different to the standard pizza with them, so thought I would try using them as a crust for my quiche.

Extra Easy Syn Value: 2 Syns Per Whole Quiche

Remember to add syns/calories if topping with cheese!

You will need:

3 Eggs
1 Bacon medallion, all fat removed and cubed
1 tbsp fat free fromage frais
Pinch salt and pepper
1/2 onion, finely diced
1 red pepper, finely diced
A few cherry tomatoes, sliced
1 Slice of Lo Dough (alternatively use a tortilla wrap)
Low calorie cooking spray

Optional: Top with 40g extra light cheese, but remember to add the calories/syns

Method:

Preheat oven to 140 degrees (non fan)

Heat a frying sprayed with low calorie cooking spray pan over a medium heat

Fry off the bacon, then remove and set aside. 

Fry the onion and peppers for 2 mins, then remove and set aside.

In a bowl, crack the eggs and whisk. Add the fat free fromage frais, salt and pepper and then the bacon, onions and peppers. 

Spray a shallow dish with low calorie cooking spray, and add some baking parchment.

Add the Lo Dough and then press it into the dish to create the pastry style case. 

Pour in the egg mixture. 

Top with tomatoes and the cheese, if using, and bake in the oven for 20 minutes. Keep an eye on it to make sure it doesn't burn.
