I love an easy weeknight fakeaway! Sometimes it's hardest to think of weeknight meals, or to find the energy to cook them after work.
That's why I always try and come up with simple meals that are perfect for 'post work' cooking. Meals that are really quick to throw together and cook, but with maximum flavour and satisfaction.
Mexican food is one of my favourite cuisines, and I love to treat myself to a midweek meal. It was super quick to make and was all done in one pan. You could make up a batch of this and use it in meals or lunches in the week.
This could be served with rice, in a wrap or as part of a bigger meal.

Chicken Fajita Mix Recipe

You will need-
4 large chicken breasts
1 red pepper, chopped
1 yellow pepper, chopped
1 red onion, dice
1 tsp smoked paprika
1 tsp cumin
2 fresh red chillies, deseeded and finely chopped
1tsp chilli powder
Juice of 1 lime
1 clove garlic, crushed
2tbsp tomato purée
Method-
Heat a frying pan over a medium heat and spray with frylight.Fry off the onions, chillies and pepper.
Chop the chicken into bite sized pieces. Add to the pan and sprinkle over the paprika, cumin, chilli powder, lime juice, garlic. Stir fry for 2 minutes.
Add the tomato purée and continue to stir fry until the chicken is cooked all the way through. Add a little water if needed to create more of a sauce.
