I know how hard it can be to get the energy together to cook when you have been at work all day. That's why I always try and focus on making things as simple and as easy as possible for myself.
I love weeknight recipes that allow me to chuck everything all in at once, and put it in the slow cooker or oven. This dish only really requires some basic chopping with some seasoning, and a baking tray!
You can play around with the recipe and add as many veg as you like into the tray. I used sweet potato, carrots and red onions and peppers.

Cajun Chicken Tray Bake Recipe

You will need:
4 skinless chicken breasts
6 teaspoons smoked paprika
1 tsp salt
2 tsp ground black pepper
2 tsp ground white pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp dried thyme
1 tsp cayenne
2 tbsp balsamic vinegar
1 large sweet potato, finely chopped
1 carrot, finely shopped
1 red onion, finely chopped
1 lemon or lime
6 teaspoons smoked paprika
1 tsp salt
2 tsp ground black pepper
2 tsp ground white pepper
2 tsp garlic powder
2 tsp onion powder
1 tsp dried thyme
1 tsp cayenne
2 tbsp balsamic vinegar
1 large sweet potato, finely chopped
1 carrot, finely shopped
1 red onion, finely chopped
1 lemon or lime
Method:
Preheat oven to 180 degrees.
Chop the chicken breasts into bite sized chunks.
Mix together the paprika, black pepper, white pepper, garlic powder, onion powder, thyme, cayenne and balsamic vinegar and the juice of half the lemon.
Pour half of this mixture over the chicken chunks.
Lay out the chopped and prepared vegetables on a baking tray.
Cover with the other half of the Cajun seasoning, and top with the chicken.
Bake in the oven for 25-30 minutes, or until the chicken is cooked through.
