When it comes to breakfasts I know what I like, and how I like it. When I recently went through all of my recipes, I noticed that there were less breakfasts than anything else. I find that it is really easy to slip into the routine of the same easy breakfast.
I have seen the whole 'egg in hole' concept before, and wanted to give it a go myself. This method means that I pack in some extra veggies with my meal as well. Usually an egg in hole recipe is done with a fried egg, but me being me wanted to be a little different!
You can experiment with this recipe and add in loads of different flavours, add things like cheese or meat, or change the veggies put in. I used mushrooms, peppers, tomatoes and onions.
I used my new JML Pan, which really makes cooking anything egg based so much easier.

Egg In The Hole Recipe

You will need:
2 slices 400g wholemeal bread
2 eggs
1/2 onion, finely diced
1 tomato, finely chopped
1/2 red pepper, finely chopped
1/2 garlic clove
pinch salt & pepper
Method:
Cut a whole in the centre of each slice. Remove the bread middle.
Fry off the veg in a frying pan
Bunch the veg in the centre of the pan, then place the bread over the top.
Whisk the eggs, add the salt and pepper, then pour into the whole.
Place the bread insides of the top of the egg. Cook for 2 minutes, then flip the bread over.
Keep repeating until the egg is cooked through and the bread is crispy.
