I was recently sent an amazing turkey roast dinner by Donald Russell butchers, which meant I got to cook up a Christmas roast before the actual day, seeing as the review needed to be live in early December.
There were plenty of leftovers from the roast, which meant I could come up with some new, super tasty turkey leftovers recipes, and get the recipes live ready for those of you searching for ideas. Of course there is the traditional bubble and squeak, but I wanted to get something a that was different from tradition (I once had burgers for my main Christmas meal on Christmas day one year, I like to break traditions!)

Another good thing about Christmas is that there is normally plenty of cheese lying about, as well as cranberry sauce. I have tried to keep this recipe as low calorie as possible, as well as Slimming World friendly or Weight Watchers Friendly.

Leftover Christmas Turkey Quesadillas Recipe

Weight Watchers Points (For guidance only, always double check) 3 Points
You will need:
2 weight watchers wraps
40g cheddar per wrap (80g total)- As it is Christmas leftovers, see if you have any nice smoked cheddar or different cheese.
Leftover turkey, shredded
1 tablespoons cranberry sauce
Leftover carrots or veg
1 tsp smoked paprika
Salt & pepper to season
Low calorie cooking spray
Method:
In a bowl, add the turkey, carrots/veg, cranberry sauce, salt, pepper and paprika. Mix well.
Put a small amount of oil in a large frying pan
Place one of the wraps in the pan fry cook for a about a minute, then turn over
On one half of the tortilla add half of the turkey mixture and 40g of cheese.
Fold the tortilla over to encase the filling, cook for another minute and then flip over.
Cook the quesadilla until golden brown and the cheese is melted, about 2-4 minutes per side.
