Breakfast is said to be the most important meal of the day. It is one of my favourite meals of the day, and I love to go out and enjoy different breakfasts out and about.
Those weekends with little plans where you can focus on creating something extra special are the best. This breakfast is made for one of those lazy, chilled mornings, with tasty food and a relaxed atmosphere.
This dish is really simple to make and leaves very little washing up afterwards. It's a mixture of crispy potatoes, baked beans, bacon, mushrooms topped with crumbled feta and a fried egg.
I didn't have any tomatoes in the house when I made this, but I think they would go really well in the dish.
I used a frying pan to cook all the ingredients together, then added the egg and covered the pan so it cooked all the way through. If you have an airfryer, you could cook the potatoes up in that first and then add them in just before you cook the egg.
You can experiment with this dish, and add as many different low fat ingredients to make it as tasty and as filling as possible.
Idea: This dish is great with roast dinner leftovers! Just use leftover roasties and veg, leftover meat, the beans and the rest of the ingredients.
This meal is Slimming World friendly and Weight Watchers friendly by using low fat and low sugar.
I used a relatively small pan, and could only fit the 1 egg in, which made it a perfect size for 1 person. Just adjust the amount of potatoes and the egg if you are making this for more people.
Why not experiment and come up with different flavour combinations, or add things like low fat sausages.

You will need:
2 large potatoes, cut into small cubes
1/2 an onion, finely diced
1/2 garlic clove, crushed
1/2 tin of beans
handful of mushrooms, sliced
2 bacon medallions, sliced, all fat removed
35g feta cheese, crumbled
low calorie cooking spray
salt & pepper
smoked paprika
1 egg
Method:
Spray a frying pan with low calorie cooking spray.
Add the potatoes and fry in the pan for 10 minutes, stirring constantly to avoid them burning. When cooked, remove from the pan and set aside.
Add the mushrooms, onions, garlic, salt, pepper and smoked paprika. Stir and mix well and simmer over a low heat for 2 minutes, or until the mushrooms are cooked
Add the beans and cooked potatoes to the pan and mix well.
Make a gap for the egg, and crack into the gap. Cover the pan and leave for 3 minutes, or until the egg looks cooked through.
Crumble with feta on top and serve!
