I first heard about dirty fries from watching American reality TV shows. I have this weird obsession with googling any restaurant that may pop up in a reality TV show, having a look at the menu and picking out what I would order if I was there. It's super fun- if you're a foodie like me I highly recommend it. You get to discover all sorts of new foods, especially if the restaurants are in America! Dirty fries are similar to loaded fries, in that you have some tasty fries topped with veg or meat, with cheese and loads of flavour. The good thing about them is that there really is not limit to the toppings that you can include, which means you can really get your creative juices flowing!
I topped mine with bacon, onions, mixed peppers and cheese, with a garlic yogurt topping. I've seen versions of these with gravy, sausage meat and loads and loads of different sauces. We've recently gotten into sweet potato fries in our house, so I wanted to give some dirty sweet potato fries a go.
I have found that the way to get perfect SP fries is to just bake them in the oven without any par boiling first.

Sweet Potato Dirty Fries Recipe
You will need:
4 medium Sweet Potatoes
Olive Oil Frylight
Salt & pepper
Pinch smoked paprika
1 onion
2 peppers
2 tbsp Worcestershire sauce
1 tsp mustard powder
4 Bacon medallions (all fat removed)
160g Extra Light Cheese
Optional: Mix a couple of tablespoons of fat free yogurt with some minced garlic to make a sauce topping.
Method:
Preheat oven to 190 degrees.

Cut into small rectangle fries

Lay the chips out onto a baking
tray spray with fry light so that they all have an even covering.
Sprinkle with the salt, pepper and
smoked paprika.
Bake for 25 minutes, but make sure
you check them regularly as they can burn in places, so may need to be turned half way through cooking.
Meanwhile, prepare the topping.
Finely dice the onions and peppers, and chop the bacon into small pieces.
Fry off until the veg and bacon is cooked through. Add a splash of Worcestershire sauce, the mustard powder and add a pinch of salt & pepper.
Once the fries are cooked, put them on an oven proof plate or dish, load them up with the bacon and veg mix, then grate over the cheese, pop back in the oven until the cheese has melted, and serve!
