I love my slow cooker so, so much. Not only does it produce awesome casseroles, soups and stews, it also makes the most melt in the mouth meat you can ever make in the home. I find it super helpful for batch making food, and it also creates the most succulent meat.
I often cook up some chicken breasts and add different flavours, like BBQ, Greek seasoning, or in this case Cajun spices.
I often make up a batch of chicken and keep it in the fridge for lunches, and it is always fun to find new flavours. I tried out this Cajun flavour combination and it has rapidly become one of my favourites!

Cooked low and slow in the slow cooker, then pulled apart to melt in the mouth perfection.
This wold go amazingly in my Creamy Cajun Pasta! Just mix the cooked shredded chicken into the sauce, instead of having to fry of chicken.

Shredded Cajun Chicken Recipe

You will need:
2 large skinless chicken breasts
6 tablespoons paprika.
1/4 cup kosher salt.
2 tsp ground black pepper.
2 tsp ground white pepper.
2 tsp garlic powder.
2 tsp onion powder.
1 tsp dried thyme.
1 tsp cayenne.
Method:
Add the chicken breasts and the seasoning, and a splash of water. Place in the slow cooker for 6 hours. Alternatively you can cook in the oven on a low heat for 1.5 hours.
Once cooked, pull the meat apart with 2 forks and mix with the excess juices.
You could also try laying some veg in the bottom of the slow cooker, like peppers and onions, which can then be mixed up with the meat.
