One of my favourite Mexican dishes are quesadillas! A dish that, until recently, I never thought would be syn free on Slimming World.
A Quesadilla is a flour tortilla or a corn tortilla filled with a savoury mixture, topped with cheese, then folded in half to form a half-moon shape. Thanks to the Weight Waters tortilla wraps being a healthy extra, this dish can now be enjoyed without any syns (if using your healthy extra A & B).

Shredded Chilli & Lime Chicken Quesadillas, Crispy Potatoes & Salsa Recipe
You will need:
I made up a batch of my shredded chilli and lime chicken bake
Weight Watchers wrap
40g Extra Light Cheese per wrap
Fry Light
For the salsa
4 cherry tomatoes, cut into chunks
1/4 of an onion finely diced
1 yellow pepper finely diced
Pinch salt & pepper
1 tsp balsamic vinegar
For the potatoes
200g potatoes, peeled and diced
Low calorie cooking spray

Method:
Bring a large pan of water to the boil, then cook the diced potatoes for 3 mins. Drain, shake out onto a kitchen paper-lined tray and leave to cool.
Spray a large non-stick frying pan with low calorie cooking spray and turn on a medium heat.
Add the potatoes then turn them all evenly 2 or 3 times until nicely browned all over – this can take about 7 mins.
For the quesadillas, spray a separate frying pan with low calorie cooking spray. Place one of the tortillas in the pan and cook for a 2 mins, then flip over.
On one half of the tortilla add the Mexican shredded chicken filling, then top with the cheese Fold the tortilla over to encase the filling. Press down and allow to cook for 2 mins.
Flip the quesadilla until golden on each side and the cheese has melted.
To make the salsa, roughly chop all the ingredients and mix well.
