I wanted to make a super easy weeknight meal that used some things up that I already had in the house. I have played around with wholemeal mustard and chicken before, and took that idea and developed it further.
I cooked everything in my cast iron casserole dish on the hob, but you could also use a skillet or frying pan with a lid.
Serve with plenty of speed food!

You will need-
2 tbsp mustard powder
1/4 tsp smoked paprika
1/4 tsp salt
1/8 tsp pepper
8 strips of smoked bacon, all fat removed.
1 onion, finely dice.
4 boneless, skinless, chicken breasts
300ml chicken stock (can be made up from a cube)
2 tbsp fat free fromage frais
Low calorie cooking spray
Method-
Mix the mustard powder, smoked paprika, salt and pepper together to make a flavour coating for the chicken.
Sprinkle the mixture over the chicken breasts and coat evenly. Set aside.
Spray the cooking dish with low calorie cooking spray and heat over a medium heat. Add the bacon and fry off until crispy. Remove bacon and set aside.
Fry off the diced onions until softened and golden. Remove and set aside with the bacon.
If the dish is dry, add more low calorie cooking spray. Add the chicken breast to the dish and cook on a low heat, turning once, for 2-3 mins each side. Remove the chicken to a separate plate.
In the same pan, add the stock, bacon and onions and mix well. Add the chicken breasts back to the dish, cover the dish and cook on a low heat for 15 mins, or until the chicken breasts are cooked through and the stock has reduced.
Once cooked, stir through the fat free fromage frais to get a creamy sauce and sprinkle a little extra smoked paprika on top!
