Feeling inspired by the new Slimming World Curry Club book, I created a feast fit for a slimming King or Queen! I served up Chicken Tikka, 1 syn Carrot & Onion Bhajis, 1 syn Samosas, syn free rice, keema matar, garlic and mint yoghurt with mango chutney!

You will need-
4 x 140g skinless chicken breasts, cut into chunks
Juice of 1 lime
1-2 drops of red food colouring (optional)
5 tbsp tikka curry powder
Salt and freshly ground black pepper
Low calorie oil spray (less than one calorie per spray)
1 onion, peeled and grated
4 garlic cloves, peeled and crushed
2.5cm piece root ginger, grated
1 red chilli, deseeded and chopped
1 tsp each of ground cinnamon and ground cumin
6 level tbsp tomato purée
5 tbsp fat free natural fromage frais
Boiled rice and vegetables such as carrots and cabbage, to serve
Method-
Heat a frying pan sprayed with low calorie oil spray. Add the onion and fry for 5-6 minutes. Add the garlic, ginger, red chilli, cinnamon, cumin, lime juice and remaining curry powder and fry for 2-3 minutes. Add the chicken and seal.
Stir in the tomato purée and 250ml of water. Bring to the boil, reduce the heat and simmer for 12-15 minutes stirring often.
In the last few minutes of cooking, add the framage frais.
You will need-
450g (1lb) of extra lean beef mince
1 large onion, chopped finely
3 cloves of garlic, crushed
heaped teaspoon of fresh grated ginger
2 teaspoons of cumin seeds
2 teaspoon of ground coriander
2 teaspoons of chilli powder
1 teaspoon of garam masala
1 teaspoon of turmeric
1 cup of frozen peas
4 tablespoons of tomato paste
freshly chopped coriander to serve
salt and black pepper
Low calorie cooking spray
Method-
Spray a frying pan over a medium heat with some low calorie cooking spray
Add the onion, garlic, carrot , celery and ginger and cook for approx 5 mins to soften.
Add the minced beef and cook until browned, separating the mixture.
Stir in the spices, chillies and tomato paste. Mix well. Add a little water if it looks a little dry.
Reduce heat to a simmer until meat is cooked through and sauce has reduced to a thicker consistency – approx 30mins
Stir in the peas at the last few minutes.

1 tsp ground cumin
1 tsp ground ginger
70g gram flour (chickpea flour)
1 tsp sea salt
1 tbsp tomato puree

Method:-
Preheat oven to 200 degrees C/Gas mark 6 and line a baking sheet with non stick baking paper
Spray a large non stick frying pan with low calorie cooking spray and place over a medium heat. Add onions and carrot and gently stir fry until softened, Add turmeric, chilli powder, ground coriander, ground cumin and ginger to the pan. Stir then remove from the heat.
Tip the mixture into a bowl. Add gram flour, salt and cumin seeds and mix well. Mix the tomato puree with 4 tbsp water and add to the onion mixture. Stir together o the flour makes a batter that coats the mixture.
Divide into 12 portions and roll into balls. Place on baking tray and spray with low calorie cooking spray. Bake for 10 mins, give another spray and cooker for a further 10 minutes.

Samosas
You will need-
Low calorie cooking spray
500g Extra lean beef mince
1 tbsp mild curry powder
400g potatoes, peeled, boiled and mashed
110g frozen peas
4 tbsp finely chopped coriander
1 red chilli, deseeded and finely chopped
Salt
3 jumbo filo pastry sheets (50cm x 24cm)
Method-
Spray a large non-stick frying pan with low calorie cooking spray and place over a medium heat.
Add the curry powder, beef minceand peas and stir-fry for 4 minutes. Remove from the heat and add the chopped coriander and red chilli, season well with salt and set aside.
Preheat the oven to 190°C/170°C Fan/Gas 5. Line a large baking sheet with baking parchment. Place the three filo sheets on top of each other and cut them in half width ways.
Cut each half into three even strips length ways to give you a total of six strips of filo per sheet (18 strips in total).
Lay the strips on a clean work surface and lightly spray with low calorie cooking spray. Place a teaspoon of the potato filling at the bottom of each strip and fold the pastry diagonally to enclose the filling and form a triangle.
Press down on the pastry and fold again until you reach the end of the strip leaving you with a triangular pastry parcel. Repeat with the remaining strips and filling to make 18 parcels.
Place the parcels in a single layer on the prepared baking sheet, spray with low calorie cooking spray and bake for 15-20 minutes or until golden and crisp. Remove from the oven.
