Cauli couscous is a low-carb, low-calorie and gluten-free alternative to rice or couscous. It is made using only grated cauliflower and thankfully larger supermarkets have started to sell it ready made, making it easier than ever to prepare!

I have found 2 ways to cook the ready made cauli rice. If you are cooking it to serve there and then the the best way to cook is to stir fry.
If, like me, you are making up a batch for lunches, you can microwave in a heatproof bowl, covered with cling film, for three minutes on High. This can be done at the point of eating and mixed in with the veg
Serve with plenty of speed food!

You will need-
1 pot cauliflower couscous
1 clove garlic, finely chopped
4 tablespoons diced red pepper
4 spring onions, sliced
1 red onion, finely sliced
150g cherry tomatoes
1 pinch salt
1 pinch ground black pepper
1 dash balsamic vinegar
1 tbsp smoked paprika
1 courgette, chopped
1 red pepper finely chopped
Fry light
1 lime
Method-
Preheat oven to gas mark 7, 220 or 200 for fan ovens.
Prepare a non stick shallow roasting tin by spraying with frylight. Place all the veg, including garlic cloves, into the dish.
Sprinkle with smoked paprika and balsamic vinegar and the juice of half a lime
Roast vegetables until tender for approx 45 minutes. Stir halfway through the cooking time.
If you are cooking this to serve immediately, then the the best way to cook the cous cous is to stir fry. Squeeze the rest of the juice over the finished dish
