I took inspiration from Slimming Eats Cheeseburger Quiche and decided to create my own big mac quiche!
If you haven't already tried the Kraft Light Thousand Island Dressing it's a great sauce to have in the cupboard and costs only 0.5 syns per table spoon and also holds a striking resemblance in taste to the McDonalds big mac sauce (see big mac in a bowl!)

Healthy Extras:- A per 1 quarter of the quiche
You will need:-
350g of extra lean beef mince
Handful of cherry tomatoes
4 gherkins, sliced
1 onion sliced
2 garlic cloves
200ml of quark
4 eggs
120g cheddar cheese (4xHEa’s)
splash of worcestershire sauce
splash of balsamic vinegar
salt and black peppers
Low calorie cooking spray
Kraft low calorie thousand Island dressing
Method:-
Preheat oven to 200c (gas mark 6)
Mix together the beef mince, balsamic vinegar, worcestershire sauce and fry off on a medium heat in a frying pan. Then press down into the bottom of your quiche dish. This forms the base of the quiche so make sure it's pressed down firmly.
Top with the onions
Whisk together the eggs and quark, season with salt and pepper
Pour the egg mixture over the beef mince
Sprinkle over the cherry tomatoes and sliced gherkins and top with the cheese
Bake in the oven until mixture has set and the cheese has melted
Serve with salad and kraft light dressing
