This is a perfect midweek meal that's quick to make and delicious to eat. I bought the pork medallians from Aldi and they were already pretty fat free. I trimmed off any excess to make sure it was syn free. Mixing al the flavourings together makes an amazing rub, just cover the meat entirely in the mix and you can guarentee amazing flavours!
You will need:-
Method:-
Fry off the pepper, onion and sweet corn with fry light in a pan.
Add 2 cups of rice to 4 cups of water, I used a coffee cup. Bring to the boil and them simmer until all of the water is absorbed, which is usually around 20 minutes. You’ll need to stir it regularly to prevent it from sticking.
Meanwhile, preheat the grill to medium to medium high.
Mix together all the seasoning to make a rub, rub into each piece of pork to get an even coating
Place on a griddle pan, sprayed with fry light. Turn occasionall until cooked through.
Serve with salad and rice

1½ teaspoon garlic powder
½ teaspoon oregano
2 teaspoon cumin
½ teaspoon salt
1 tsp smoked paprika
1 tsp cayenne pepper
4 pork medaliians, all fat removed
1 tsp mustard powder

2 cups of brown rice
1 cup sweetcorn
1 stock cube
1 tsp smoked pprika
salt & pepper
1 onion diced
1 red pepper diced
1 tbsp dried chillies
