Creamy Chicken Casserole | Healthy Recipe

It's the end of October, the clocks have changed back and the nights are drawing in. This is the time I love to start eating winter warmer meals like casseroles, stews and pies. What's even better with meals like this is that you can chuck everything in a dish or slow cooker and let it do its work!

Slow Cooker Creamy Chicken Casserole





All syn calculations are my own, and are for guidance only. I am not affiliated with Slimming World in any way. These are meals and recipes that I have followed myself. 

You will need:

4 Medium Chicken Breasts
A few carrots, chopped
1 Large Onion, Diced
1 Small Leek, chopped
Mushrooms, chopped
1 yellow pepper, chopped
(as much veg and speed food as you can add really!) 
2 Chicken Oxo Cubes, made up in 2l water
Salt & Pepper
2 tbsp Italian herbs
1 Tbsp Mustard Powder
1/2  small tub extra light philly cheese

Method:

Put everything except the philly cheese into a casserole dish or slow cooker dish. 

Make sure there is enough stock to cover all the ingredients and cook in the oven at 160 degrees for 2 hours, stiring occasionally. If using a slow cooker, cook on high for 4 hours or low for 8 hours

Stir the philly cheese just before serving until mixed in. If sauce needs thickening, add a few teaspoons of gravy granules (and syn accordingly)
