This time of year turkey is in abundance! I came up with this delicious recipe that's perfect for leftovers, and much more exciting than turkey sandwiches!
Put a small amount of oil in a large frying pan
Place one of the tortillas in the pan fry cook for a few mins, then turn over
On one half of the tortilla add half of the turkey, half of the onions, half the jalapenos, half the cranberry sauce and half the cheese. Fold the tortilla over to encase the filling
Cook the quesadilla until golden brown and the cheese is melted, about 2-4 minutes per side.

Note:-To make this SW friendly, use 40g of extra light cheese per 1 wrap and use it as your Healthy Extra A, and use a low syn wholemeal wrap (such as ASDA wholemeal tortilla wraps 8 pack 34g each) for around 4.5 syns. This, with the cranberry sauce, means each whole wrap is 6 syns

80g Smoked Cheddar

2 tablespoons cranberry sauce
1 Red onion, finely chopped
1 jalapeno, finely chopped
