As I mentioned in my sausage plait recipe, I wanted to create a vegetarian alternative to take into work. I came up with this and I absolutely loved it, even though I'm not a veggie! It is definitely just as delicious as the sausage plait, and from now on I will always be making both!

1 slab ready rolled puff pastry or use Paul Hollywoods puff recipe like I did!
6 Cherry tomatoes, chopped
1 large potato
Spring onions, finely chopped
150g grated cheddar
½ tsp English mustard
25ml milk
50ml double cream
2 tablespoons of flour
Egg & milk to brush
Method:-
Peel and chop your potato into small cubes and boil until cooked.
Mash the potato until smooth. Add the cheese, onions, cheddar, mustard and mix together.
Add the cream, milk and flour and mix together to a smooth paste and allow the mix to cool completely.
Sprinkle some flour on your work surface and roll out the pastry into a rough square shape, about 30 x 30cm
Spoon your cheese mixture in the middle of your pastry, into a sausage shape allowing plenty of room around the edges and top and bottom for the plait.
Cut the pastry at a slight diagonal, on either side of the filling, into 1.5cm strips, the same number each side
Put the tomatoes on top of the cheese mixture, tuck the top and bottom edges of the pastry over the filling. Starting at the top, lay the pastry strips over the filling, taking one from each side, to cross like a plait. Once done brush the pastry with egg and milk mixture.
Bake for 35/40 minutes until the pastry is golden and cooked
