I was in the gym the other day, and saw somebody making meatballs on the TV (I am sadistic and love to watch cooking shows while working away on the bike!) This inspired me to create my own meatballs but stuffed with mozzarella. This is enough to serve 4 people, but if you are feeding less it tastes just as good the next day, or you could even recreate a subway meatball sandwich!

For the meatballs
750g minced beef
70 g fresh breadcrumbs
1 clove garlic, crushed
1 tsp salt
Salt & pepper
handful of fresh parsley, finely chopped
1 ball mozzarella
70g parmasan, grated
For the sauce
2 tins of chopped tomatoes
Handful of basil, chopped
1 garlic clove, crushed
salt & pepper
Sprinkle of paprika
Sprinkle of chilli flakes
splash of lemon juice
tagliatelle to serve
Method:-
In a bowl, mix all the ingredients together for the meatballs except the mozzarella.
In your hands grab a handfull of meat, squish it together and flatten it. Put a small cube of mozzarella in the middle and fold the meat round to create a ball. Repeat until you have used all the mixture.
Heat some olive oil in a pan and brown the meatballs off all over, then add to a large oven dish. This seals them and stops them falling apart.
Once you have done all the meatballs, add you tomatoes to the empty frying pan, then add the basil, garlic, salt, pepper, chilli flakes, paprika and lemon and mix together. Pour over the meatballs in the oven dish and bake in the oven for 20-25 mins.
Cook the tagliatelle and serve!
