BBQ Piri Piri Chicken Kebabs

As soon as we saw the slightest bit of sun we decided head out in the garden!.  I whipped up these Chicken, halloumi and pepper kebabs and cooked them on a disposable BBQ, it was amazing! The spice goes so well with the chicken, and halloumi on the BBQ is just incredible. You don't have to cook them on the BBQ though, a griddle pan or under the grill would work just as well.


You will need:-

3 large chicken breasts
1 pack of halloumi
1 red pepper
kebab sticks
For the piri piri marinade 
½ red onion
2 cloves of garlic
1-2 tsps chilli flakes
Dash lemon juice
2tbsp white wine vinegar
1tbsp Worcestershire sauce
A bunch of fresh basil 
1tbsp sweet smoked paprika

Method:-

Put all the ingredients in a bowl for the piri piri marinade and mix.   

Put the chicken breasts in the marinade and leave for at least 2 hours in the fridge.

Chop the pepper and halloumi into small chunks. 

When the chicken is marinated , chop in to chunks.  Put a bit of chicken, then pepper then halloimi on the stick and repeat until the stick is full

Cook on the BBQ or Grill until the chicken is cooked all the way through

Serve on its own or with a pitta bread
