Recipe: Home-made Takeaway Pizza Feast!

Most of us love to eat a takeaway pizza, but in my opinion it is SO overpriced. I decided to recreate my own Dominos feast at home, at a fraction of the price.   I worked it out to be just under £10 to feed 2 people, and still have left overs for lunch the next day.  I like mine to be a plain pepperoni, where as Nick likes his to be packed and had chillies, pepperoni and pancetta.  I made the base from scratch and stuffed the crust with cheese.  It is calorific, but luckily I went to the gym the next day to work it all off, and we're all allowed a treat from time to time!  The crust on Nicks pizza did get slightly huge, but still tasted great!

You will need:-

For the base (courtesy of Mr Oliver)
1 kg white bread flour
1 teaspoon fine sea salt
2 x 7 g dried yeast sachets
1 tablespoon golden caster sugar
4 tablespoons extra virgin olive oil
650 ml lukewarm water

Pizza Sauce
1 carton of passata
1 Clove of Garlic
Basil

Mozzarella Sticks
Sprinkle of flour
Bowl of breadcrumbs
2 eggs
1 tablespoon milk
1 mozzarella ball, cut into strips

Chicken Goujons
3  Medium chicken breasts
2 eggs, beaten
Bowl of Breadcrumbs

Dough balls
Left over pizza dough, rolled into balls
1 tablespoon of Butter
1 garlic clove
sprinkle of chopped basil

Method:-

Make the pizza dough first, as it takes an hour to prove. This mixture makes 2 pizzas.

Sieve the flour and salt on to a clean work surface and make a well in the middle.

In a jug, mix the yeast, sugar and olive oil into the water and leave for a few minutes, then pour into the well.

Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.

Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.

Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands

Timing-wise, it's a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them.

I out some cheese around the edge and folded over to make a stuffed crust.

Then you can get on with the rest!

To make the pizza sauce mix all the ingredients together in a jog, and once the pizza base is ready, smother all over the top!  Then you can add as many or as little of your toppings as you would like.

Any left over dough can be made into doughballs, mix the butter garlic and basil together and smother over the top, and put in the oven with the pizza.

Put the pizzas in the oven at 190 degrees for 20-25 mins, or until they look ready! While they're in the oven, make the mozzarella sticks and chicken goujons.

Mozzarella Sticks
Whisk eggs and milk together.

Coat each piece of cheese with flour then dip in egg, roll in bread crumbs, then repeat.

Heat up oil in a deep fat fryer and carefully drop each bit in, a few at a time.

Once browned, remove and drain on kitchen roll.

Chicken Goujons
I baked my chicken breast first in the oven.

Whisk eggs and milk together.

Coat each piece of chicken with flour then dip in egg, roll in bread crumbs, then repeat.

Heat up oil in a deep fat fryer and carefully drop each bit in, a few at a time.

Once browned, remove and drain on kitchen roll.

Serve everything together and enjoy!
