I started off trying to make some cookies, but they didn't go that well! I had to make some amendments and created salted caramel cupcakes! I love the balance between salt and sweet, and these have a special little treat in the middle. This now tastes like a cookie, but with the texture of a cake. I have been doing a lot of experiments with salted caramel, so there will be more recipes like this to come!
You will need:-
Mix salt, butter, both sugars and vanilla essence in a bowl
Gradually add the milk, then add the eggs
Gradually add the flour while continuing to mix
Add choc chips, if the mixture looks too liquidy, add more flour until you have a smooth cake mix.
Spoon the mixture into cup cake cases, then press a rolo into each and make sure the mixture covers it
Bake in the oven at 180 degrees for 10-15 mins or until risen and golden then allow the cakes to cool
Melt the remaining rolos in a bowl and drizzle over the top of the cup cakes, and quickly sprinkle sea salt on top of the caramel mixture,
