There's nothing better than a proper hearty weekend breakfast! I was lucky enough to get a waffle iron for Christmas, and I wanted one for the sole purpose of potato waffles. This recipe is what I came up with after trying it out a few times.
The hash brown waffles are topped with bacon, tomatoes, cheese and a poached egg. I served it with some beans and syn free coleslaw as well.
Why not mix it up and try out different toppings? They make the perfect breakfast base!

Hash Brown Waffles Recipe

You will need:
2 large potatoes
1 tsp minced garlic
pinch salt & pepper
1 tsp smoked paprika
1 egg lightly beaten
4 Bacon medallions
2 Eggs, for poaching
40g extra light cheese per person
Chopped cherry tomatoes
Method:
Preheat waffle iron as per manufacturer's instructions.
Peel the potatoes and grate until they are all shredded. Place the shredded potatoes in a tea towel, then wrap the tea towel around. Squeeze out all the excess moisture in the potatoes over the sink through the tea towel.
Transfer to a bowl and add the 1 beaten egg,salt, pepper, garlic and smoked paprika and mix well. Divide the mixture into 2, then place 1 half in the waffle iron. Cook for approx 8 mins, until crispy and golden.
Meanwhile, chop the bacon into slices and fry off in a pan sprayed with frylight. Poach the eggs just before serving. Check out my Youtube video to find out how to perfectly poach eggs every time!
Top the hash brown waffles with the bacon, eggs, tomatoes and cheese!
