Easter is fast approaching, and I really wanted to try and come up with some low syn Easter treats. One thing I always used to love was the mini egg easter nests. As you can imagine, there is a lot of syns involved in the original! To make this low syn, I knew that I had to find some kind of alternative to melted chocolate.
I did some research into healthy options, and came up with the idea of creating a kind of chocolate syrup to coat the rice Krispies. It worked well and the got consumed quickly at work!
I also used choc shot for extra chocolatey flavour. It's only half a syn per tsp, so split between all the cakes is nothing.

You will need-
24 mini eggs
56g Rice Krispies
1 tbsp of 100% pure cocoa powder
2 tsp choc shot
2 tbsp of brown sugar
4 tbsp of skimmed milk
12 mini cake papers
Method-
First make the chocolate coating. Add the cocoa powder, choc shot and brown sugar to a saucepan.
Whisk the ingredients together and then heat on a medium setting. Keep whisking while it heats up and eventually thickens. It needs to resemble a caramel before it is ready.
Add the Rice Krispies and mix with a wooden spoon until the Rice Krispies are all coated, make sure there's no rouge uncoated ones!
Spoon the mixture evenly into 12 mini cake cases in a muffin tin. Press the mixture down into each case. Top each cake with 2 mini eggs, or 1 for even less syns.
Place the muffin tin in the freezer for 1 hour to set.
