This is a delicious pasta bake with a Mexican twist. Chicken fajita pasta topped with some Doritos, for an extra kick.
While the Doritos give the dish an extra dimension, you can make the dish syn free by going without.

Extra Easy Syn Value: Syn free
You will need-
4 large chicken breasts, diced
1 red pepper, chopped
1 yellow pepper, chopped
1 red onion, diced
1 tsp smoked paprika
1 tsp cumin
2 fresh red chillies, deseeded and finely chopped
1tsp chilli powder
Juice of 1 lime
1 clove garlic, crushed
2tbsp tomato purée
1 carton of passata
250g dried pasta, I used bows
To top-
40g extra light cheddar per person
1 small bag Chilli Heatwave Doritos (This makes up the syns and can be omitted to make the dish syn free)
Method-
Preheat oven to 220C/200C fan/gas 7.
In a pan over medium heat, fry off the chicken breasts, peppers and onions. When the chicken is cooked through, add the smoked paprika, cumin, chillies, chilli powder, lime juice, garlic, tomato purée and passata. Leave to simmer for 2-3 minutes.
Meanwhile, cook the pasta as per the pack instructions. Once cooked, drain the pasta and pour into a casserole dish.
Pour the fajita mix over the pasta and mix slightly. Cover with the cheese, taking care to put 40g on per quarter. Crush up the Doritos and sprinkle over the top of the cheese.
Bake in the oven for 10 mins or until cheese is bubbling.
