Pasta has to be one of the most versatile things to cook with in the kitchen. There are so many different dishes that you can create.
This recipe came about when I really fancied some kind of creamy pasta, but also felt like creating something new.
I normally go for a plain garlic and herb and after looking through the spice rack I found some Cajun flavouring.
This dish is super rich tasting but still low in syns. The syns are totally worth it for the creaminess but can be made syn free by swapping cream cheese for fat free fromage frais or quark.

Creamy Cajun Chicken Pasta Recipe

You will need-
4 medium chicken breasts, thinly sliced into strips
1 x 180g pack light cream cheese
1 red pepper, finely diced
1 yellow pepper, finely diced
1 red onion,finely diced
1 red chilli, finely diced (lave out if you don't want spice!)
4 tbsp tomato puree or passata
1 clove garlic
4 tbsp Cajun Spice mix (plus 1 for the sauce)
50ml Chicken stock
300g dried pasta
Low calorie cooking spray
Method-
In a freezer bag or plastic bag add the chicken breast pieces with the Cajun spice mix. Seal the bag and move the chicken around inside of the bag, to coat all over with the flavouring.
Leave in the fridge for at least 20 mins, but preferably.

After the chicken as marinated, heat a frying pan over a medium heat and spray with frylight. Add the chicken breasts and fry off.
Add the red & yellow peppers, onion, garlic and chilli. Fry of for 2-3 minutes.
Meanwhile, cook the pasta as per cooking instructions.
Add the tomato puree, chicken stock and cream cheese to the frying pan with the chicken and veg mix. Stir until a sauce is formed. Add another teaspoon of Cajun seasoning.
Add some of the pasta water to reduce the thickness if required.

Once the pasta is fully cooked, add it to the chicken and sauce mix and stir through so everything gets an even coating of the sauce.
Top with extra cheese as a healthy extra A.
