This dish tastes soooo naughty, but it is actually Slimming World friendly! Gooey, cheesy mac 'n cheese topped with a meatball marinara style topping. I tried this with 2 different types of Mac n Cheese and it worked well with both.
I must point out that in order to keep within syns, you must be careful with the cheese allowance! This is 6 syns if using 1 lot of cheese as your healthy extra. Make sure you weigh the cheese topping per each quarter. You can make this dish even easier by using ready made meatballs from the SW Iceland range.

You will need-
I have 2 great recipes to make the macaroni cheese base, either work great in this dish. Creamy Macaroni Cheese or Mac n' Cheese. Use half of the amount of cheese the recipe says, and don't top with cheese before adding meatballs other half for topping!
For the Meatballs-
1 pack SW meatballs from Iceland OR
To make the meatballs yourself-
500g extra lean mince
1 small onion, finely diced
1 Tbsp Worcestershire sauce
1 tbs diced fresh parsley
Low calorie cooking spray
(mix all the ingredients together and form into balls)

Topping-
1/2 carton of passata
Pinch of Salt & Pepper
1tsp Italian Herbs
Pinch of Salt & Pepper
1tsp Italian Herbs
Light mozzarella for topping,
80g light mozzarella
80g light mozzarella
Method-
Pre heat oven to 190 degrees
Prep whichever mac 'n cheese recipe you are using, and before placing it in the oven, set aside.
If you are making your own meatballs, mix all the ingredients together and roll into balls using your hands.
Heat a frying pan over a medium heat and spray with low calorie cooking spray. Fry the meatballs until browned all over. Pour over the passata add the herbs and seasoning and mix. Then pour the meatballs on top of the mac 'n cheese.
Top with mozzarella and bake in the oven on a medium heat for 20-25 minutes until the mixture is hot and bubbly.
