This is a really simple dish to pull together and works perfectly for take to work lunches. You can use any type of pasta, but I'm very fond of pasta bows!

Italian Chicken Pasta Salad Recipe

You will need-
150g dried pasta bows
2 Cooked chicken breasts, shredded or cubed
1 handful halved cherry tomatoes
4 bacon medallions, all fat removed
1/4 cup chopped fresh flat-leaf parsley
2 tbsp cider vinegar
2 tbsp balsamic vinegar
A few lettuce leaves, sliced into strips
Oliver oil light cooking spray
Optional: 90g feta cheese, crumbled up
Optional: 90g feta cheese, crumbled up
Method-
Boil the pasta in salted water until pasta is soft.
Drain the pasta then rinse under the cold tap to cool.
In a large bowl add the chicken, cucumber, tomatoes, bacon, parsley, and lettuce and mix together.
Top with the cool pasta, vinegars and season with salt and pepper. Spray with a few squirts of olive oil cooking spray and mix everything up to get an even coating on all the ingredients.
Split into separate servings ready for lunches, and top with 30g feta per serving if using the feta as a healthy extra.
