I LOVE leek and potato soup and luckily I had a few spare potatoes and a leek hanging around! I just had to make my own Slimming World friendly Leek and Potato soup!
Traditional recipes are made with double cream, but mine is equally as creamy without it. I like my soups to be super smooth but you can blend it to any consistency that you like.
I used 1 tablespoon of horseradish sauce for extra flavour which is 1 syn. The soup easily makes about 6 large bowls so I didn't syn it when just having the one bowl.
If you feel more comfortable syning it, then do.

You will need-
6 Large potatoes, chopped
1 onion, diced
3 garlic cloves, whole
1 leek, finely chopped
Salt & pepper to taste
1 tablespoon of horseradish sauce (1 syn)
1 litre of chicken stock
Method-
Method-
Place the potatoes, onion, garlic, leek and stock in a large saucepan.
Leave to simmer for around 30 mins on a low heat or until all the veg is cooked and soft
Add the horseradish and stir through and mix in well
I put half the mixture in the blender at a time and blitzed until completely smooth, but you can blend to any consistency you like! Add the salt and pepper to taste.
