So here it is, the first even meal I have eaten on Slimming World! I had a day off work so whipped this tasty number up! Ham spread with extra light cheese, rocket salad , tomatoes and pickled gherkins. I also added a pea and cucumber with fat free Greek yoghurt and mint dressing, totally syn free!

You will need-
2 Slices of lean ham
1/2 bag of fresh rocket
4 cherry tomatoes
1 small pepper, chopped
Peas
1/2 Cucumber
fresh mint
Fat free Greek Yoghurt
Up to 6 extra light Cheese Triangles (free as a HEX A)
Fresh mint, chopped
(Syn free)
Optional extra
Wholegrain mustard and Sherry Vinegar dressing (1 syn). Mix half a teaspoon of wholegrain mustard with 2 tablespoons of Sherry Vinegar.
Method-
Cook the peas as per the instructions on the pack.
Chop the cucumber and scoop out the middle, chop and sprinkle with salt and pepper. When the peas have cooked and cooled mix them with the cucumber chunks .
Mix the 0% fat Greek Yoghurt and the mint together and mix in with the peas and cucumber. Put to one side, any leftovers can be eaten the next day, it is Syn free!
Spread the cheese triangles on the ham and roll up, put onto of a bed of rocket on a plate. Chop up the pepper and tomatoes and put on top. Add the cucumber and peas, and the mustard dressing if using,then serve!
