I love my slow cooker, it is one of the best food related inventions ever. I can quickly prepare a meal before I go to work and it is ready by the time I come home. It is great in our house because I work until 9pm, so by putting everything in the slow cooker in the morning before I leave, I know by the time Nick gets home at 5:30 there will be something yummy waiting his arrival.
I recently joined a group on Facebook called "Slow Cooked Wonders :)" A group of over 30,000 slow cooker fanatics exchanging delicious recipes as well as great hints and tips. They are all a really friendly bunch of people, and they all really inspired me to try our different recipes in my slow cooker, other than your standard casserole or stew. This is how I created the 7 day slow cooker challenge, 7 days, 7 different slow cooked meals from sweet to savoury!
Day 1:- Chicken and Potato Curry
I love a nice curry so created this recipe for ease and minimal time to prepare it. I think it is always best to use fresh herbs, but you could always use dried herbs instead if you want.

You will need:-
2 tablespoons of coriander
2 teaspoons of chilli
2 cloves of garlic, crushed
2 tablespoons of curry powder
4 chicken breasts
1 tin coconut milk
Dash of double cream
3 potatoes peeled and chopped into small chunks
Put the coconut milk, dash of cream and all the herbs and spices into the slow cooker and mix. Taste test it to make sure that it is to the right spice for your pallet, if not add more!
Chop the chicken breasts into chunks and add to the sauce along with the chopped potato.
Leave on low for 6 hours, or high for 4. The chicken should be deliciously tender, but double check the potatoes are cooked through as well. I used some microwave rice to serve it with for convenience, speed and ease.
